Blend in dark rum, lemon zest and orange zest. In a separate bowl, beat whipping cream until soft peaks form. Fold into cheese mixture until incorporated. Fold in candied mixed fruit. Pour ¿lling onto chilled crust. Bake for 45–50 minutes until ¿lling is risen, golden brown and almost ¿rm to the touch. Turn off oven and leave tart inside for 45 minutes with the door closed. Remove tart from oven and cool on a wire rack. Remove tart pan and transfer tart to a serving platter. Refrigerate overnight.
